Basically its a sugar. No. Better. As soon as u get the right temperature to melt (around 120) – u win to make amazing things to decorate your plate. ( yes – u can do it – everyone can do it, nowadays just as easy to get isomalt from the internet then milk from the shop.)
Be brave to work with it as a caramel – unfortunately it doesnt have a long life – considering the huminity and the temperature of environment. But for ·a ·la ·minute· challenge: working with perfection.
U can find a video on the internet how to make these beauties here for example. Not that hard – but it looks too easy. U need a perfect temperature to créate a layer of isomalt-caramel inside of your ring – it needs to hold for a second while u drop the oil in. My personal experience says – use a plastic ring(mold) intsead of a metal one. U can be f*cking amazing – but your little fingers still can not stand the 120 degrees belive me.
Here i was trying to capture different types of oils in a drop – olive oil, sunflower oil, chorizo oil – to add another dimensión to the plate – even if its just a salad – imagine a captured dressing what u need to smash into pieces and smear in!!!!! :))))
