I know i know i know! Why the hell i would ever think to write down here a stupid f8ckin’ muffin recipe? This is really silly but i have not more but one reason. This is good.

OLYMPUS DIGITAL CAMERANow working in a Pub part time where need to bake muffins freshly every day. Here they call them “magdalenas” dont know why, but probably exist a Santa Magdalena for some reason who was baking a miracle with some muffins at acient times… :) hehe…

So i found it big fun to bake muffins every morning – especially cause it can be any flavor (of course using the ingredients what we already have in house)… So i ve been told about a basic recipe and i known the original method (dry mix separate like wet mix separate then fold carefully together) and voilá : the mysterious MUFFIN was born.

I tried lots of recipes… lots of flavors of course. If u think a bit, its nothing else but a sponge cake mix baked in small portions. Of course its “nonsense easy” to get it right and get a yummy sweet when it just came out from the oven, a la minute… but what if it stays for a couple of hours or days? hmmm… different story.

This baby was still really enjoyable after a week… no joke.

I couldnt really choose flavors like fresh fruits or nuts – we dont have them on the shelf in the cell… so my option was the coffee… it was a sunday early morning and i didnt want to enjoy anything else but the magic of the caffeine….

No more unnecessary words, here we go:

  • 125g flour
  • 40g muscovado sugarOLYMPUS DIGITAL CAMERA
  • 40g white sugar
  • 1tsp baking powder
  • 1tsb soda bicarb
  • salt, vanilla
  • 1 egg
  • 55ml almond butter (or veg oil)
  • double shot of strong espresso plus
  • coffee liquor (this 2 altogether around 110ml)

But this recipe gives u not more than 5 portions of muffin, count like this. Obviously if u can use almond flour, or special butter can be just better… The method is the same, dry and wet ingredients mix separately then fold together and bake as usual, 180, around 17 minutes. Go ahead and try the best flavor combinations like orange, almond, walnut or poppy seed (my favourite) working beautifully with this black bean. First i served this simple coffee muffin with a drizzle of my special poppy seed-liquor, nyammmmmm… Using your imagination and a proper kitchen stuff can results amazing dessert… like a traditional tiramisu using this sponge mix, a coffee mousse with this base or just a mouthewatering coffee icecream with bits of heaven…

…no need more comment this “easy looking muffin”…
